“Closing Parlar provided our team with the incredible opportunity to acquire and fine-tune their knowledge overseas, immersing themselves in the rich culinary traditions of Spain and the Catalan region. This experience has inspired us to bring a fresh perspective back to Parlar, reinforcing our passion for the artistry of food. With Spanish cuisine gaining significant recognition in the world’s 50 best restaurants, we are thrilled to reintroduce Sydney to this exceptional style of dining,” says Parlar owner, Andrew Becher.
Rejoining the esteemed restaurant group alongside Franca, a chic French brasserie, and Armorica in Surry Hills, Parlar will offer a distinctive blend of global flavours, all uniquely accented by Catalan influences. The restaurant's interior, adorned with owner Andrew Becher's private collection, includes rare pieces from the renowned 1970s artist Alexander Calder. Calder's iconic works, characterised by their simplicity, vibrancy, and dynamic use of materials like wire and bronze, infuse Parlar’s atmosphere with a unique blend of elegance and creativity.

Under the expert guidance of Head Chef José Saulog, Parlar’s menu is a tribute to the vibrant culinary traditions of Catalonia. Diners can embark on a sensory journey through three curated five-course tasting menus, featuring dishes such as Loligo Squid paired with chorizo, cannellini beans, tomatoes, and smoked almonds, or the succulent Aged Berkshire Pork Loin Morcilla. To cap off the experience, guests can indulge in a White Chocolate Tarta De Santiago, beautifully complemented by basil cream and strawberry consommé.
Adding to the experience is a thoughtfully crafted cocktail menu that brings a Catalan twist to classic drinks, incorporating regional fortified wines like vermouth and sherry. Enhancing the dining experience further, Parlar's wine list, curated by Venue Manager and Sommelier Waldeck Ray, features an exclusive selection from private collections around the world. This carefully chosen assortment highlights rare and premium wines from prestigious vineyards, each selected to perfectly pair with the menu’s standout dishes.

With a seating capacity of just 55 guests, Parlar ensures each guest enjoys a personalised journey through its innovative Catalan offerings, all set against a backdrop of striking artistic décor.
The restaurant will be open from Tuesday to Saturday, 5:00pm to 12:00am, remaining closed on Sundays and Mondays. Diners can choose from three tasting menus: a $99 per person three-course-plus-snacks menu available between 5-6pm, or the more elaborate five-course-plus-snacks Essence and Adventure Menus, priced at $129 per person and $179 per person respectively.
NOTE: Parlar is now permanently closed with Le Frerot opening in its place in July 2025.
