Set within the rolling gardens of the Southern Highlands, the doors of Ardour Milton Park Bowral are preparing to open once again, this time with a renewed sense of purpose and polish. Salter Brothers Hospitality has shared new details about the estate’s next chapter, unveiling a new dining experience at Horderns Restaurant and a transformed Polo Bar complete with a charcuterie room.
Inside the grand homestead, the culinary direction takes on two distinct moods. Horderns will present refined pan-European dishes with an emphasis on seasonality and shared dining, while The Polo Bar offers a relaxed yet elegant all-day menu of charcuterie, small plates and classic cocktails. Both names may be familiar to those who know Milton Park, yet their revival brings a completely fresh energy to the estate.

Guiding this transformation is executive chef Mark Holland, whose background spans acclaimed kitchens from Nomad in Sydney to Michelin-starred restaurants in the UK. His menu at Horderns is designed around connection and dishes served family-style. Ingredients are drawn from nearby producers like Snake Creek Beef, Bunny Galore Lamb and Pecora Dairy. Holland’s philosophy is simple: food should feel comforting and memorable, with an element of ceremony that draws people together.
Horderns itself has moved to a larger, light-filled space overlooking the estate’s historic gardens, now seating just over 100 guests. The design nods to the restaurant’s heritage while embracing contemporary warmth. Garden views framed by full-height windows, greenery woven through jewel-toned interiors, and softly lit banquettes invite long, lingering meals.
Next door, The Polo Bar carries the same spirit of craftsmanship with its adjoining charcuterie room, a dedicated space celebrating artisan producers from the Southern Highlands, South Coast and beyond. Guests can settle in with hand-cut cured meats, local cheeses and a glass of regional wine, or finish the evening with a single malt or aged cognac from the bar’s extensive collection.
Milton Park’s much-loved High Tea will also continue to grace afternoons at the estate, offering a refined take on the European classic with a Southern Highlands touch.
The redesign by Sydney’s MAC Design Studio draws from the romance of European country manors while embracing an Australian sense of modern ease. The reopening is scheduled for early 2026.
