Under the creative direction of renowned chef Matt Moran and Aria's executive chef, Thomas Gorringe, the restaurant will present a 25th-anniversary tasting menu that takes diners on a journey through its illustrious past. The seven-course menu, priced at $290 per person, features modern interpretations of some of Aria's most beloved dishes.
Highlights include the yellowfin tuna with daikon, bergamot, and dashi—a nod to the iconic Earl Grey salmon dish from 2010—and the scallops paired with Moran Family Farm guanciale, apple, and elderflower, a tribute to the pork belly dish that has been a staple on the menu in various forms from 1999 to 2016. The tasting menu concludes with the decadent chocolate delice with sherry and hazelnut, a dish that once challenged contestants in the MasterChef pressure kitchen.

Aria offers an expertly curated selection of wine pairings to complement the tasting menu, including classic, premium, and non-alcoholic options. Guests can also enjoy a range of new cocktails crafted to enhance their dining experience. Noteworthy creations include The Gin Martini, featuring a blend of Never Never gin, vermouth, and brown butter; the Tropic Spritz, a tropical fusion of pineapple rum, Pineau de Charentes, green mango, ginger, and Thai basil; and the Lamington Milk Punch, which brings together Red Mill Rum, NoDo Coconut, Muscat, raspberry, and cacao. These new cocktails are available both in the main dining room and at the bar, adding a fresh twist to the celebratory atmosphere.
In addition to the tasting menu, Aria alumni chefs have collaborated to create a unique bar snack menu, available exclusively throughout September. The menu will rotate each week to showcase different interpretations of some of Aria's most cherished dishes. Highlights from this menu include Earl Grey and kombu-cured salmon by Ben Turner; Comte, prune, and truffle tart from Elvis Abrahanowicz; and grilled Peking duck dumplings by Jake Kellie. With limited bar seating available, reservations are highly recommended to experience these nostalgic yet innovative creations.
Aria’s 25th-anniversary special menus will be available from September 2 to September 29.
