Aria has introduced an exciting addition to its dining experience, unveiling a new tableside service dedicated to showcasing the best of Australian producers. Rooted deeply in the essence of Australia and the heart of Sydney, Aria has upheld a longstanding commitment to sourcing seasonal, top-quality ingredients from local producers since its establishment in 1999.

This innovative tableside dining service, spearheaded by restaurateur Matt Moran and executive chef Tom Gorringe, aims to spotlight various Australian producers throughout the changing seasons. Aligned with Aria’s culinary ethos, which emphasises the use of locally-sourced ingredients and support for Australia’s premier suppliers, this experience promises to be a celebration of Australian gastronomy.

Aria’s new tableside dining extravaganza shines the spotlight on the award-winning Australian cheese, Holy Goat. Hailing from the picturesque region east of Castlemaine in Victoria, Holy Goat is renowned for its luscious milk and cheeses boasting unparalleled complexity and flavour. 

Chef Gorringe’s menu will showcase the Holy Goat La Luna, served alongside a tantalising tarte tatin of caramelised cippolini, thyme caramel, and pickled walnut ($50 per portion). With Holy Goat recently announcing the impending closure of its on-farm cheese factory and the discontinuation of La Luna from the market in May 2024, Aria’s tableside dining service presents one of the final opportunities to enjoy this signature cheese. Given the limited quantities available, this offering will be accessible until the Easter long weekend or while supplies last.

Aria’s tableside experience will complement its existing menus, allowing guests to indulge in either the signature tasting menu or the four-course menu. Renowned for its prestigious wine selection, which blends the finest wines from Australia and around the globe, Aria boasts one of the country’s most decorated wine lists. Curated by head sommelier Salvatore Persico, the collection features an array of boutique wineries, cult favourites, and emerging stars, promising a truly unforgettable wine journey for diners.
