Parisian brasserie-inspired Armorica Grande Brasserie opens its door on Thursday, delivering an elegant accessible experience for its patrons.

Whether it’s for a quick steak frites and a glass of wine at lunch, or settling into one of our custom booths and enjoying the extensive menu over an evening with friends. Armorica has something for everyone”, says owner Andrew Becher.

Amorica’s executive chef, Jose Saulog has created a menu around woodfired cooking using the custom-built Josper Grill, showcasing traditional French techniques. Broken into four sections – raw, starters, pastas and Josper Grill – the opening menu includes a seafood tower of oysters, coral trout carpaccio, prawn cocktails, octopus roulade, and South Australian rock lobster; Jose’s take on foie gras torchon; rigatoni with slow roasted duck, fresh herbs and foie gras; as well as spaghetti scampi and Moreton Bay bug and zucchini trifolati.

From the Josper: a whole rock lobster with grenobloise emulsion; an aged pork cutlet with fennel and koji brown butter; and a whole chicken served with desert lime, chicken skin and thyme gravy.

The Armorica Grand Brasserie menu also has a dedicated steak frites section featuring cuts such as Jacks Creek grain-fed Black Angus sirloin, grain-finished Black Angus 3+ and David Blackmore full-blood Wagyu 9+ Scotch fillet.

Group executive pastry chef Travin DeHoedt has developed five desserts including the Armorica chocolate bar. The bar is made from Valrhona chocolate mousse, salted caramel, choc chip cookie, delicately finished with the Armorica branding. Crème caramel, clafoutis and a Tart ‘Du Jour’ also feature on the dessert list.

The elegant 150-seat restaurant features custom and handcrafted details including timber ceilings, Solid Oak joinery, brass gantry, and banksia red leather banquettes. Custom bar seats wrap the large Brescia Pontifina marble bar, Armorica also boasts an 18-seat fully private dining room.
