The latest bar to open in Sydney is bringing a touch of mystique and a deep nod to craftsmanship. Perched above the city, Bar See See has opened at The Porter House Precinct on Castlereagh Street- a new oriental-inspired bar and lounge dedicated to the world of Moutai (China's 'National Liquor'), but with a distinctly contemporary Sydney edge.
The latest addition to the five-level Porter House Precinct by Trippas White Group, Bar See See joins an already enviable line-up that includes Victor Liong’s Lee Ho Fook, Porter House Grounds & Cellar Door, and the Porter and Alia event spaces.

Bar See See is a Baijiu-led concept and Moutai takes centre stage through inventive cocktails designed to explore the spirit’s depth and versatility. Alongside the signature creations, the drinks list features a selection of whiskies, spritzes on tap, beer, and wines curated by group sommelier Louella Mathews.
Opening season will see guest bartenders Priscilla Leong and Paul Hammond take over the bar. The husband-and-wife duo behind The Flowing Bowl have built a global reputation through collaborations with the likes of Chanel, Rèmy Cointreau International, and Lexus Australia. Leong, crowned Australian Bartender of the Year in 2022, brings her refined creativity to the residency, setting the tone for what’s to come.

The launch menu introduces cocktails such as the High Low Martini, Kelis Colada and the standout Dragon’s Eye Punch, a fusion of Moutai Chun 1992 and Loch Lomond 18-year-old whisky with osmanthus and goji. Classic cocktails have been reimagined as well, including the Sydney Vesper, Daiquiri See See and Lao Gan Margarita.
To complement the drinks, Lee Ho Fook’s executive chef, Brad Guest, has crafted a small, share-style menu that feels at home in the space. On the menu you’ll find Sydney Rock oysters with shallot and ginger vinegar, duck croquettes, spiced red skin peanuts, pickled vegetables, and the kind of salt and pepper lotus chips that disappear faster than you’d like to admit.
Led by venue manager Nance Liong, the vision for Bar See See is to reimagine Moutai for a new generation. One that values both tradition and innovation, where heritage spirits meet a social Sydney crowd.
Visually, the bar takes cues from Moutai’s ‘flying fairy’ motif and the mirrored beauty of Rorschach symmetry. The result is a softly lit, transportive space that feels fluid and reflective - a place made for both quiet contemplation and late-night conversations.
