Black Star Pastry’s First Snow Cake will be available to pre-order for Christmas on 1 December. It’s a modern interpretation of your traditional Christmas cake, but just a bit lighter – which isn’t a bad thing after a hearty Christmas lunch. 

Black Star Pastry’s First Snow Cake includes layers of elderflower cream, a drizzle of white chocolate atop each layer of milk sponge, a vein of Griottine and cherry compote, made from kirsch marinated morello cherries and a crunchy base, made from roasted wafer. It’s dusted with white chocolate to replicate forest snow and garnished with hand-carved chocolate and pine-flavoured pinecones with cherry essence, fondant snowflakes, fresh local cherries, and white chocolate ice shards delicately placed atop the cake.

Arnaud Vodounou, Head Pastry Chef at Black Star Pastry says he was inspired by “a winter wonderland, a white Christmas and creating a full-flavoured cake, a true representation of all the festive flavours notes.”

Pre-orders open on 1 December and the cake will be available for collection from the 22nd to the 24th of December. Portion sizes come in four and ten slices.
