Infinity at Sydney Tower has launched a 5 course tasting menu, dedicated to caviar.
The caviar-themed menu includes dishes such as Phoenix Wagyu MB6+ beef tartare with egg emulsion and lemon myrtle speculoos Darya Imperial Beluga Iran and Yumbah green lip abalone with chawanmushi, charred enoki, baby corn and red vein sorrel WA scampi.

Beluga caviar is renowned as one of the best caviars in the world, with an intensely rich flavour, while scampi caviar is known for its rich creaminess that melts on the tongue, with a fresh salty flavour that pops on your palate.
The experience has been created to elevate the dining experience for guests, by indulging in the exquisite world of caviar, sourced from around the globe. The menu is available from this week and is priced at $290pp.
