Two Good Co. has announced Colin Wood as its Chef of the Month for April.

Wood’s culinary journey began in Perth and led him to become Head Chef at Cumulus Inc. in Melbourne’s CBD, followed by the role of Development Chef for Andrew McConnell. During this time, Wood discovered his passion for cheesemaking. Under the guidance of cheesemaker Richard Thomas, he honed his skills and pioneered the in-house Dairy Program for Cutler & Co.

In 2017, Wood ventured to New York City, where he served as Culinary Director for Ignacio Mattos at Flora Bar, Estela, and Altro Paradiso. When he returned to Australia, he collaborated with Poly, AP Bakery, and Wildflower Brewing & Blending in Sydney, establishing himself as a key figure in the artisanal cheese scene.

In mid-2023, Wood founded Goldstreet Dairy, an artisan micro-cheesery located at Wildflower in Marrickville. Using locally sourced milk from Camden Valley Farm, Goldstreet Dairy crafts high-quality cheese and dairy products.

Through the Chef of the Month (COTM) program, social enterprise Two Good Co. partners with top chefs who create delicious menus cooked and served at their cafe in Darlinghurst’s Yirranma Place. They are also available to purchase through their catering service. All proceeds from the sales will help at-risk women affected by domestic violence, homelessness and trauma find employment. 

Colin’s menu for Two Good Co. includes;

  • Tomato, Spaghetti & Fresh Ricotta Jaffle on AP Bakery Fenugreek Loaf
  • Fermented Farro & Walnut Salad with Pickled Carrot, Apricot & Labneh
  • Chocolate and Orange Madeleines

The April COTM menu by Colin Wood will be available from Tuesday 2nd April at Two Good’s cafe at 262 Liverpool Street, Darlinghurst, or online.
