You’ve made the pavlova for Christmas lunch, but what do you do will all the leftover egg yolks? The solution is a decadent eggnog that’s so naughty, it’s nice! 

Here’s an eggnog recipe that will be a huge hit on Christmas Day.

  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 1/2 cup heavy whipping cream
  • 1 cup milk
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon vanilla paste or extract
  • Favourite spice to sprinkle on top 
  • The alcoholic version: add 30ml of your favourite rum, brandy or whisky.


  1. In a medium bowl, whisk the egg yolks and sugar together until light and creamy.
  2. Combine the cream, milk and nutmeg in a saucepan and bring to a simmer while stirring continuously. 
  3. Add large spoonfuls of the cream and milk to the egg mixture and whisk while adding to ensure a smooth consistency. Keep adding until all the cream and milk mixture has been combined with the egg mixture. 
  4. Pour the mixture back into the saucepan and return to the stove over medium heat. 
  5. Continue whisking until the mixture has thickened slightly.  
  6. Remove from heat. 
  7. Stir in the vanilla and alcohol. 
  8. Pour eggnog into a jug and refrigerate until chilled. 
  9. Serve the eggnog in a glass with a sprinkle of cinnamon or nutmeg and decorate with star anise.
