Two icons will unite for a one-night celebration of food and wine on Friday 12 September 2025, with Infinity by Mark Best hosting the 30th anniversary dinner for Tasmania’s House of Arras, pairing fine Australian produce with world-class sparkling wine at the top of Sydney Tower.

Set 81 floors above the city, the evening will mark the first public unveiling of House of Arras’ anniversary release, the 2006 E.J. Carr Late Disgorged. Seventeen years in the making, the méthode traditionnelle sparkling is a rare expression of the patience and precision that has earned Ed Carr and his team global acclaim.

Chef Mark Best has created a four-course menu designed to sit in harmony with the wines, drawing on Australian ingredients from land and sea. Dishes include bluefin tuna with brioche, faux gras, pepper berry and pork crackling, matched with the Blanc de Blancs 2017. Another highlight pairs the Grand Vintage 2017 with steamed bass grouper, fish milk, sorrel and fermented potatoes.

Infinity by Mark Best and House of Arras

Infinity by Mark Best, which opened in August, is already redefining the experience of dining above Sydney’s skyline. Best’s food is grounded in produce and culture, yet always contemporary in its execution. The dinner with House of Arras signals the restaurant’s ambition to champion Australian dining at its finest, while celebrating a Tasmanian winery that has become a benchmark for sparkling wine worldwide.

Sommelier Polly Mackarel has worked alongside Best and Carr to complete the line-up for the evening, curating a wine journey that reflects the depth and diversity of Australian viticulture.

Founded in 1995, House of Arras has grown into Australia’s most awarded sparkling wine producer, with accolades that include Chief Winemaker Ed Carr receiving a Lifetime Achievement Award from the Champagne and Sparkling Wine World Championships. This 30th anniversary dinner offers guests a chance to experience that history in every glass.
