Babylon Sydney is set to turn up the tempo this weekend as Innocent Bystander takes over the popular rooftop at Westfield Sydney for three days of food, wine and music from Friday 31 October to Sunday 2 November. The Yarra Valley winemaker, known for its playful spirit and easy-drinking drops, is bringing its signature brand of fun to Sydney with a line-up designed for wine lovers and foodies.

The celebration kicks off with a free tasting bar where guests can explore Innocent Bystander’s crowd favourites including crisp Prosecco, refreshing Pinot Gris, Rosé, Tempranillo and the ever-popular Pinot Noir. Joining the mix are two new additions: the Watermelon Spritz, a bright, fruit-forward wine spritz with a clean finish, and the Easy As Shiraz, a lighter take on the classic red. With a live DJ spinning from 5pm on Friday, it’s the perfect start to the weekend.

Those looking to settle in for something more substantial can book into one of Babylon’s long lunches, running across Saturday and Sunday. There’s a Levantine-inspired feast featuring dishes like yellowfin tuna with harissa and pickled beetroot, chicken shish tawuk cooked over woodfire, and a decadent chocolate tahini dessert with Turkish coffee ice cream. Each course is paired with a glass from Innocent Bystander’s collection.

For something more intimate, the Saturday night wine dinner offers a deeper dive into the craft behind each pour. After a glass of prosecco on arrival, diners will move through a three-course menu that brings out the best in the wines. Dishes include scallops with tarama and caviar alongside Pinot Gris or Rosé, Angus beef Hünkar beğendi with Tempranillo, and a mandarin parfait with macadamia brittle matched to the playful Watermelon Spritz.
