Lee Ho Fook Sydney is set to make a major impact on the city’s dining scene when it opens at The Porter House Hotel in mid- September. The acclaimed two-hatted Melbourne restaurant, led by celebrated chef and restaurateur Victor Liong, will bring its signature modern Chinese cuisine to the heart of Sydney.

Located within the five-level dining precinct on Castlereagh Street, Lee Ho Fook Sydney will sit alongside Porter House Grounds & Cellar Door, intimate event spaces Porter and Alia, and rooftop Bar See See, a pan-Asian inspired lounge. Overseen by Trippas White Group, the precinct is fast becoming a landmark for food and hospitality.

Originally launched in Melbourne in 2013, Lee Ho Fook redefined Chinese dining in Australia by combining regional Chinese traditions with modern European technique. The Sydney menu will continue this approach, focusing on authentic flavours, premium Australian produce and contemporary presentation.

Guests can enjoy signature dishes such as prawn toast with Tasmanian sea urchin, crispy eggplant with spiced red vinegar, Kung Pao Skull Island prawns and Glacier 51 Toothfish steamed with silken tofu. Each dish reflects Liong’s philosophy of balance, creativity and respect for tradition.

This opening also marks a family collaboration. Victor’s sister, Nianci Liong, joins as restaurant manager, bringing experience from some of the country’s top venues including Momofuku Seiobo and Fred’s. In the kitchen, head chef Brad Guest – with a career alongside industry icons like Martin Benn and Clare Smyth – will lead the team, creating menus that highlight seasonality and local ingredients.

The design of Lee Ho Fook Sydney pays tribute to its Melbourne heritage. Expect exposed brick walls, dark hardwood floors, rich tones of red and black, and brass details, all accented by soft neon lighting for a warm yet contemporary feel.

Lee Ho Fook Sydney opens for lunch Wednesday to Sunday and dinner Monday to Saturday from 17 September 2025.
