Makaveli is an exciting new culinary destination launching in Bondi. Co-owners Jacob Hill and Phill Cooke – accomplished hospitality industry managers – have collaborated to launch this contemporary eatery with Italian influences. Inspired by the renowned Renaissance philosopher and historian Machiavelli, the name Makaveli embodies rebellion, symbolising the audacious spirit behind this venture.

Makaveli offers a cozy and inviting atmosphere for guests seeking a morning coffee, a quick afternoon snack, or a vibrant evening out. The carefully curated menu includes a selection of snacks and shareable plates, designed to complement an innovative beverage selection featuring locally sourced coffee and creative cocktails.

After crossing paths in Greece, Jacob and Phill now leverage their extensive global experiences and passion for the hospitality industry to craft a truly distinctive culinary experience in the heart of Bondi. Drawing from their diverse professional backgrounds—Jacob’s successful oversight of Cali Press venues in Sydney’s Eastern Suburbs and Phill’s adept management of Bondi venues for Milpa Collective—Makaveli emerges as a fusion of flavours and expertise.

The minimalist design ethos of Makaveli allows our food, coffee, and drinks to shine, offering a vibrant, modern space that reflects the energy and spirit of our local community,” says Jacob. 

The menu at Makaveli is a tribute to the joy of sharing food, with an emphasis on communal dining. Key menu highlights include Burrata, Kingfish Crudo, and Stracciatella di bufala.

Key cocktail highlights will include the Elderflower Spritz, Strawberry Negroni and the Charlie Chaplin along with the 2022 Venduto Bolla Rosa and 2022 Fiasco Medium Red as wine favourites.

Makaveli, featuring interior design by Imogen Reed (known for her work at Bar Lucia and Taqiza), seamlessly combines contemporary minimalism with the vibrant essence of Italian culture. Makaveli is now open, setting the stage for a unique dining experience that offers small plates, cocktails, and coffee through a casual and relaxed lens.
