In a tribute to Australia’s coastal beauty and artisanal craftsmanship, Manly Spirits Co. has unveiled the first gem in its ‘Rockpools of Sydney’ series: the ‘Fairy Bower Gin.’ This limited edition gin, priced at $90 per 700ml bottle, is a citrus-forward marvel, expertly crafted using sustainably grown Australian native botanicals and fruits, including Rainforest lime, Finger lime, Ribery, and whole lemons and limes.

The ‘Fairy Bower Gin’ showcases a unique production process that involves steeping whole, fresh lemons and limes – not just their peels – in the still for 24 hours. This innovative method maximises flavour extraction and ensures a fresh profile fully capturing the fruits’ essence. It’s a testament to the distillery’s commitment to sustainability, minimising waste and enhancing flavour simultaneously.

The ‘Fairy Bower Gin’ is inspired by the picturesque Fairy Bower Pool at Manly’s Cabbage Tree Bay. Like its namesake, this gin is designed to be enjoyed by the water, perfectly paired with cocktails that evoke the relaxed, vibrant spirit of coastal living. The collaboration with local Australian artist Amber Oswald for the label art brings this vision to life, encapsulating the quintessential Aussie beach lifestyle.

Manly Spirits Co. Head Distiller, Riley, embarked on an experimental journey to create this exceptional gin. After eight trial batches, Riley perfected the recipe with whole limes and lemons to achieve a distinctive, bright citrus-forward flavour profile.

Riley says the result is a vibrant and fresh gin, with no earthy tones, and minimal waste. “This innovative approach is a testament to Manly Spirits Co.’s dedication to pushing the boundaries of traditional gin-making, offering a unique and refreshing experience for gin enthusiasts.”

Oceanides Collins

  • 45ml Fairy Bower Gin
  • 20ml *Coconut syrup
  • 20ml Lime juice
  • 1/2 Passion fruit (15ml)
  • Soda water

1. Combine sugar and coconut milk over heat until
the sugar dissolves completely.

2. Allow to cool and store in the refrigerator.

3. Build ingredients in highball glass with ice and top with soda water.
