This year’s Vivid Residence features Brazilian chef Manoella ‘Manu’ Buffara, who will take over Kiln at Ace Hotel Sydney from 4 to 6 June.

For three nights only, diners will have the opportunity to embark on a culinary journey unlike any other, curated by Chef Buffara and her team in collaboration with Kiln’s esteemed chefs. The event marks the convergence of two culinary powerhouses, celebrating sustainable fine dining with a contemporary twist.

Chef Buffara, renowned for her pioneering approach to sustainability at Brazil’s award-winning Manu Restaurant, brings her ethos to Australia for the first time. With her restaurant having received the prestigious Flor de Caña Sustainable Restaurant Award in 2023, Buffara has firmly placed Curitiba on the global culinary map. Now, she ventures to Sydney to showcase her culinary artistry, highlighting the importance of responsible sourcing and environmental consciousness in the gastronomic world.

Manu Buffara hosts Vivid Residence at Kiln

Collaborating with Kiln’s chef partner Mitch Orr, Chef Buffara will present a menu that intertwines Brazilian flavours with Kiln’s creative, unpretentious approach to fine dining. The fusion of their culinary philosophies promises an unforgettable dining experience, where each dish tells a story of sustainability, innovation, and cultural exchange.

One of the menu highlights is a Brazilian rendition of Orr’s famous Jatz snack. This creative reinterpretation symbolises the harmonious blend of two worlds, paying homage to both Chef Buffara’s heritage and Kiln’s local influence.

But Vivid Residence is more than just a feast for the palate; it’s an immersive experience that engages all the senses. Set against the backdrop of the Sydney skyline, diners will enjoy breathtaking views of the Opera House while indulging in a menu that incorporates fire throughout—a nod to Kiln’s culinary ethos and commitment to pushing boundaries.

Guests can choose from two tasting menus, each thoughtfully curated to showcase the best of what Chef Buffara and Kiln have to offer. From scallops with artichoke and wild mushroom consommé to sweet potato with mud crab salad and pasta, each dish is a testament to the culinary innovation and dedication to sustainability that defines Vivid Residence.
