New steakhouse, Marrow & Co. opens its doors on Friday 6 December at the Bankstown Sports Club, promising a culinary journey where Australian beef takes centre stage in a setting that balances timeless charm with contemporary sophistication.
The menu will feature a tribute to local produce, with 13 cuts of Australian beef on offer. From grass-fed and wagyu to dry-aged and secondary cuts, each steak showcases the rich variety and exceptional quality of the country’s beef. A standout option is the Riverine Tomahawk—a 1.5kg steak dry-aged on-site for up to four weeks. Guests can even select their cut directly from the striking dry-ageing fridge.

For those seeking to start their meal with flair, the menu offers creative takes on steakhouse classics. Highlights include hand-cut beef tartare, chicken liver parfait served with house-made pickles, and a truffled brie cheese soufflé. The showstopper is a beautifully crafted Beef Wellington, featuring a Grasslands Eye Fillet wrapped in puff pastry, mushroom duxelle, pâté, and prosciutto—the perfect dish for sharing.
Culinary Director Evan Burgess leads the charge, bringing over 20 years of experience from celebrated kitchens in Australia and London, including Michelin-starred venues. His vision combines technical excellence with a passion for making fine dining feel accessible and inviting.

Marrow & Co’s drinks list has been curated to complement the menu. Signature cocktails reimagine classic recipes, while the wine selection, led by sommelier Ben Moechtar, strikes a balance between iconic and contemporary labels. Adding a local touch, craft beers brewed on-site at the Bankstown Sports Basement Brewhouse round out the offerings.
The venue, designed by Etic, is a masterpiece of thoughtful design, blending rich textures with elegant details. From plush leather seating and warm timber accents to the nostalgic charm of dining carriages reminiscent of vintage train journeys, the space feels both luxurious and welcoming. Private dining rooms cater to those seeking an intimate setting for special occasions, while sandstone details and bespoke finishes create a backdrop worth lingering over.
Marrow & Co aims to offer polished yet approachable service, ensuring every guest feels at home, whether popping in for a casual dinner or marking a milestone with friends. With seating for 125 guests, the restaurant is well-suited to everything from small gatherings to larger celebrations.
