Proper Burgers is setting up shop in Perth, landing its very first outlet at Optus Stadium just in time for summer. It’s the starting point for Matt Moran’s new venture, built around a straightforward idea he’s carried through his entire career: when food is kept simple and treated with respect, it tastes better.

The concept leans into grass-fed beef cooked with care, soft buns, sharp cheese and house-made sauces. Moran has long believed that the magic comes from proper seasoning and attention, not unnecessary fuss. The result is a style of burger that keeps its focus on flavour and quality. He sees this opening as the foundation of a national rollout, aiming to reach people who want good produce handled well, without complication.

The stadium is familiar territory for him. Since stepping in as a culinary ambassador in 2022, he’s reshaped premium dining areas and created limited specials for big-ticket events like State of Origin. Proper Burgers now becomes part of that broader partnership with VenuesLive, joining the food lineup at aisle 128 and paving the way for a second stadium outlet before the 2026 AFL season.
The Original Proper Burger covers the classics with grass-fed beef, lettuce, tomato, cheese, pickles and the house Proper Sauce. The Proper Chook brings southern-style crumbed chicken with a crisp slaw. Sides include popcorn prawns, corn ribs with parmesan and chipotle mayo, and salt and vinegar onion rings that suit a hot summer’s day at the footy.
Moran has worked closely with executive chef Alasdair Thompson and the stadium team, continuing his commitment to Western Australian producers. For him, this next step is about building something that fits the energy of a stadium crowd while still honouring the kind of food he believes in.
With the first outlet finally open, Proper Burgers signals a lively new chapter in its partnership with Optus Stadium, and a clear ambition to take this produce-first, done-well approach beyond Perth in the future.
