Sydney hospitality group Sunday Co. has lifted the curtain on The Conservatory - the final stage in Morrison’s Oyster Bar and Grill’s transformation in the heart of the CBD. The opening brings a fresh chapter to one of Sydney’s most recognisable dining rooms, reshaped through a renovation that’s been quietly unfolding over the past year.

It was Sunday Co. Managing Director, Brett Sergeant, whose vision was to evolve Morrison’s without losing its soul. Together with business partner James Wicks, he’s reimagined the space as something more intimate, a space that invites you to linger over lunch and another bottle of wine.

Working with interior designer Craig Madgwick of Design Madgwick, the team leaned into craftsmanship and comfort. The glass atrium remains the hero, now framed by curved banquettes dressed in Ralph Lauren fabric and custom tables perched on lion’s-feet bases. Marble tiling catches the light, greenery softens the edges, and brass detailing glows gently against the evening hum.

A semi-private dining room for twenty adds another layer, offering a tucked-away space for long tables and late nights. The mood hints at a European conservatory, yet everything about it still feels unmistakably Morrison’s.

Since Sunday Co. took over in 2023, Morrison’s has found new rhythm as one of Sydney’s most respected dining institutions. Its reputation still rests on the same principles: great produce, simple technique, and a menu that celebrates both land and sea.

There’s the in-house dry-aged beef program and the oyster bar stacked with Wheeler Sydney Rocks and Coffin Bay Pacifics. The aged Berkshire pork chop with smoked mustard, Barnsley lamb with harissa, and duck ragu with pappardelle show just how well Morrison’s balances comfort with polish.
