Marilo will enhance the hotel’s food and drink options, including in-room dining, Harvey’s bar, and packages for conferences and events. Executive Chef Tiffany Jones will lead the culinary team, working alongside Lotus' Executive Chef Steve Wu to emphasise hyper-local ingredients while mentoring emerging talent in hospitality.

Marilo will offer an eclectic range of contemporary Australian dishes, thoughtfully designed to cater to diverse tastes. The hotel and Lotus will also collaborate to host a variety of events throughout the year, celebrating the local area with exceptional food and wine.

As the premier dining spot at the property, Lotus invites both guests and locals to enjoy its renowned quality and unique take on Chinese cuisine. Aiming to become a beloved part of the Highlands' dining scene, Lotus will be serving breakfast, lunch, and dinner.
