Etymon Projects, the creative force behind renowned hospitality establishments Poetica, The Charles Grand Brasserie & Bar, and Loulou Bistro, Boulangerie and Traiteur, is joining forces with The Langham, Sydney to introduce a new restaurant and lounge bar within the hotel. Although the venue is yet to be named, it is scheduled to open in mid-April following a comprehensive refurbishment of the existing restaurant and bar areas.

While the exact concept for the restaurant and lounge bar is still in the works, Sebastien Lutaud, Etymon’s Director of Culinary, provides insights into the inspiration behind it.
“The concept draws inspiration from the relaxed and attentive service found in the finest restaurants of iconic luxury hotels in Europe, with a touch of the inviting ambience of the French, Italian, and Spanish Mediterranean coast,” says Lutaud.
He adds, “The heart of the restaurant will feature a captivating seafood bar with bar stools, inviting patrons to enjoy a glass of wine while witnessing the creation of a delectable fresh crab omelette. Despite its exquisite ambience, the restaurant aims to be approachable and a sought-after destination for both Sydneysiders and visitors, perfectly complemented by the location and surroundings of The Langham, Sydney.”
Paolo Saccone, Etymon’s Director of Wine, details the restaurant’s wine program, emphasising a selection that showcases Australian and New Zealand classics alongside exceptional varietals from the Mediterranean coast, including Italy, the south of France, and Spain. Saccone envisions a lounge bar that rivals the esteemed hotel bars of Paris, London, and New York—a luxurious yet relaxed and approachable space where vintage spirits and cocktails take centre stage.
In addition to the restaurant and lounge bar, Etymon Projects will manage The Langham, Sydney’s room service, as well as functions and events menus.
Details such as venue names, the team roster, and the head chef will be revealed in the coming weeks.
