Two Good’s Chef of the Month is Mat Lindsay – the chef responsible for the acclaimed restaurants Ester and Poly, as well as the author of the modern Australian cookbook ‘Ester.
Through the Chef of the Month program, social enterprise Two Good partners with top chefs who create delicious menus that are cooked and served at their cafe in Darlinghurst’s Yirranma Place, and are also available to purchase through their catering service. All proceeds from the sales will help at-risk women affected by domestic violence, homelessness and trauma find employment.

Mat’s menu aligns with his ethos of seasonality, simplicity and generosity, curating a toastie, salad and a sweet treat available throughout October.

The menu includes the following items:
- Tuna Melt – the classic tuna melt with a twist – elevated with punchy flavours of cornichons, capers and chilli
- Cauliflower, egg and upland cress salad – a delicious spring salad with green apple, celery, apple cider vinegar, mustard and paprika
- Burnt Cheesecake – a creamy and decadent cheesecake
Mat’s menu is now available during October at Two Good’s cafe located at 262 Liverpool Street, Darlinghurst, or online (salad and cheesecake only).
