QT Sydney has launched Parlour, a neo-French bistro that operates throughout the day and into the late hours, offering a premium dining experience. Under the guidance of Chef Sean Connolly, the Creative Director of Food and Beverage at QT Sydney (known for his work at Gowings in QT Sydney and Esther in QT Auckland), this bistro is a captivating slice of Paris nestled in the city. It boasts a diverse wine selection and embodies the warm hospitality that QT is renowned for.
Situated on Market Street, Parlour carries a rich historical legacy and remains a well-kept secret. With its soft lighting and intimate ambience, Connolly takes diners on a culinary journey, serving seasonal and timeless French dishes infused with a touch of vintage charm. The menu draws inspiration from Connolly’s early classical training and pays homage to what he fondly describes as “French avant-garde.”
Head Chef, Kenny Radegonde (previously Felix, La Paris brasserie) works alongside Connolly, bringing over 17 years of experience in the industry and his own flair to Parlour. Highlight dishes include Escargot, with smoked ham, pea puree and garlic Pernod butter, Steak Hache à Cheval made with wagyu brisket and served with frites, fried egg, and pepper sauce, and Coffee Crème Brûlée, caramelised à la minute.

The supper menu is available for late-night rendezvous including Raclette Cheese or Confit Duck Jaffle, served with garlic butter jus and Comté crisps or Fromage with a preferred pour. For dessert, there is Crepe Suzette Flambé and Profiterole Dame Blanche.
The Parlour wine journey pays tribute to the traditional French wine regions of the Old World as well as modern Australian wines. Featuring an impressive selection of more than 350 wines, the list features both renowned and up-and-coming labels from France and Australia.
The wine cellar, known as ‘The Bureau’, holds an allure that would captivate the likes of Hemingway, Gertrude Stein, and F. Scott Fitzgerald. Originally a ticket booth for the movie theatre built in 1929, Parlour’s all-female sommelier team and Head Sommelier Samantha Belt, will guide guests through the menu and expansive selection housed within the cellar walls.
The beverage menu is a collection of classic cocktails with a contemporary twist, paying homage to the world’s most renowned cocktails throughout history. Highlights include French 75, Green Fairy with Absinthe, Champagne Framboise, Martini Francois, Kir Royale and Crème Brûlée Martini.
