Google pinsa pizza in Sydney and only a handful of venues appear in the search results, including one locale of note with glowing reviews: Ta Ta Ta Pizza, which can be found on the back streets of Bondi Junction. 

Often referred to as ‘Roman-style’ pizza, pinsa offers a healthier twist on traditional pizza bases, thanks to its extended fermentation process and use of spelt, rice, and soy flour. This combination produces a light, airy texture with a satisfying, crunchy crust. Pinsa originates from the Latin word pinsere, a nod to the age-old technique of hand-pressing and shaping dough.

Ta Ta Ta Pizza was founded by Shlomi Palensya — former Executive Pastry Chef at the Ritz-Carlton in Israel and Sydney’s Park Hyatt — who launched the store in April 2023 after recognising a gap in Sydney’s Pinsa market. 

Sold by the piece from $10 to $15, there’s a decent range of slices to choose from, including 

  • Roman Bianca: Roasted potatoes, mozzarella, mixed herbs pesto and parmesan.
  • Classic Margherita: Mozzarella fior Di latte, tomato sauce, grana padano, parmesan and basil.
  • Roman Salami: Salami, fior di latte, mozzarella, arugula tomato sauce and parmesan.
  • Olive Neapolitan: Mixed olives, mozzarella, grana padano, parmesan, tomato sauce and oregano.
  • Roselina: Rose sauce, cherry tomato, spanish onion and basil.
  • Hot Salami & jalapeño: Spicy salami, cheddar, arugula, tomato sauce and jalapeño.
  • Eggplant Plus: Pesto, roasted eggplant, zucchini, capsicum and smoked mozzarella
  • Potato & Roman Sausage: Shallots , fior di latte , sausage mix , roasted potatoes
  • Polenta sauce, Shallot & Feta: Fresh corn-based, fior di latte, shallots and feta cheese
  • Mushrooms Bianca: Champignon, Portobello and Enoki mushrooms, Parmesan cream sauce, Kale, mild chilli, Mozzarella and Parmesan.

Ta Ta Ta Pizza also offers a variety of sandwiches and salads. There’s bench space for six people if you want to eat in; otherwise, place your order online ahead of time for takeaway.
