Rick and Sarah Stein are bringing their signature coastal dining experience to Sydney, with Rick Stein at Coogee Beach set to open its doors on 1 December 2025. Perched above the beach within the new InterContinental Sydney Coogee Beach (which also opens in December), the 224-seat restaurant will mark the couple’s first Australian city venue, just in time for summer.

True to Stein’s reputation for “fresh seafood, simply prepared”, the Coogee restaurant will spotlight the best of New South Wales and Australian coastal produce. The menu, led by head chef Colin Chun, will reflect Rick’s long-held philosophy that great seafood speaks for itself when treated with respect and restraint.

For Chun, who has spent over two decades honing his craft across Hilton Sydney, Pullman and W Taipei, the opportunity to lead the kitchen is both professional and personal. Having long admired Stein’s focus on seasonality and simplicity, he’s intent on translating that ethos for Sydney diners through an ingredient-first approach.

The restaurant’s adjoining bar will offer coastal-inspired cocktails and an extensive wine list. The new space strikes a balance between refined and relaxed, with a choice of dining room, courtyard terrace, or bar seating to suit the mood.

The Coogee opening follows the success of Rick and Sarah’s Bannisters by the Sea in Mollymook and Bannisters Port Stephens, both of which have become cherished coastal destinations. Their latest venture, in partnership with Australian hospitality group Salter Brothers, extends the couple’s connection to the Australian coastline while introducing their signature style to Sydney’s eastern beaches.
