Diners at Milpa Collective’s Bondi venue, Calita will be treated to a takeover by Italian chefs Stefano Marano and Andrea Sonnante on a collaborative pop-up project called “That’s Amore”.
On Wednesday 7th and Wednesday 14th of December, the pair will create a special set menu for $75 per person with a Mediterranean and Mexican influence.
Marano and Sonnante aim to create a playful fusion of an array of regions in the world that are geographically far apart but often so close in food, culture and traditions.
How “That’s Amore” at Calita came about
Marano says the collaboration is the result of two chefs that love cuisine from their own heritage and roots but also share a great interest and curiosity for other food cultures.
“It is the perfect opportunity to blend in different flavours and juggle balances according to the different venues in which the pop-up occurs. Expect tasty and textural snacks, barbecue seafood and definitely a pasta dish!” says Marano.
Guests will also enjoy a special cocktail created by Santa Catarina’s Head Bartender, Luna Ercoli as well as the regular Milpa Collective cocktail and wine list.

On offer will be a selection of dishes that blend Mediterranean flavours and techniques with Mexican cuisine through seasonal produce that is all locally sourced.
Marano has worked in restaurants all around the world and brings expertise from Michelin-starred restaurants in Naples. He has also worked at the Manly Pavillion and was Head Chef at The Apollo Restaurant. The “That’s Amore” pop-up at Calita with Sonnante will be his last project before he embarks on an exciting new venture in early 2023.
Sonnante – originally from Brescia in Northern Italy – also brings a wealth of experience, having worked at venues such as 10 William St. and Fratelli Paradiso. He is also the former co-owner of Sagra Restaurant in Darlinghurst.
Milpa Collective Co-Founder Liber Osorio says Calita has always been a place to have a good time with friends and family by the sea.

“We have followed Stefano’s and Andrea’s careers in Sydney for a while and we have developed a friendship based on our culinary experiences, and the curiosity to experiment with new ingredients and cuisines. After Stefano worked with Mexican chef Rosío Sanchez in her famous Copenhagen restaurant, his interest in Mexican food grew. Since then, Stefano has helped Milpa Collective in various stages of product development and menu creation.”
