All day $25 pasta special

For $25, guests can enjoy The Charles Bar all-day pasta specials. Executive Chef Billy Hannigan’s creations are nothing short of culinary poetry:

  • Cacio pepe-style pappardelle with hen’s egg, black pepper, and aged pecorino
  • Braised lamb rigatoni with pickled walnuts, red wine, and petit chèvre cheese
  • Mussel and nduja butter spaghetti, topped with rocket and capers

The $25 burger special

But the specials don’t stop there. The $25 burger special is a meat lover’s dream come true. Sink your teeth into the aged wagyu cheeseburger, layered with pickles and The Charles’ signature sauce, served alongside a generous portion of seasoned fries, house wine, beer, or a soft drink. If you’re in the mood to treat yourself, you can request foie gras for just $15 more. This special is available from 12 to 6 pm, Monday to Saturday.

Under Colin Tam’s guidance, The Charles Bar has embarked on a journey of mixological innovation. Embracing the limoncello trend, Colin and his team have crafted their own seasonal Charles Cellos, featuring flavours that evolve with the seasons. 

Other cocktail highlights include the mango and yuzu martini, the croissant-washed punch infused with passionfruit and vanilla, and the refreshing grapefruit paloma garnished with a grapefruit glass and lemongrass stalk. Each sip is an adventure in taste and craftsmanship.

Not to be missed is The Charles’ signature martini, a harmonious blend of Four Pillars Rare Dry Gin, seasonal Saison ‘summer flowers’ vermouth, saline, and orange bitters. This easy-drinking martini is a testament to The Charles’ commitment to quality and innovation.
