In July, Lankan Filling Station is teaming up with the social enterprise Two Good for their Chef of the Month program. Owner O Tama Carey and Head Chef “Coco” Corentin Kergall have collaborated to create an exclusive menu that will be served at Two Good’s Darlinghurst cafe throughout the month.
Two Good’s Chef of the Month program invites renowned chefs to curate a delectable menu, featuring a toastie, a soup or salad, and a sweet treat. These delicious items will be prepared and served at their cafe in Darlinghurst’s Yirranma Place, as well as being available for purchase through their catering service. All proceeds from the sales will go towards empowering at-risk women who have been affected by domestic violence, homelessness, and trauma by helping them find employment.
Lankan Filling Station’s menu showcases a creative spin on traditional Sri Lankan flavours, offering quick and delicious lunch options. The menu includes the following dishes:
- Spicy Seeni Sambol, Cheddar & Mozzarella Toastie (contains gluten, dairy, and fish; gluten-free option available): This tantalizing toastie features Seeni Sambol, a classic Sri Lankan onion relish with a delightful combination of sweet, sour, smoky, and spicy flavors. It is complemented by a blend of mozzarella and cheddar cheese, all topped off with a brush of curry leaf butter.
- Pumpkin Kola Kanda with Coconut & Curry Leaf Temper & Roti (contains dairy; gluten-free option available): A twist on a beloved Sri Lankan dish, this rice porridge is infused with fresh coconut and an assortment of bitter herbs. The addition of pumpkin adds a comforting heartiness to the dish.
- Cashew & Cardamom Milk Toffee (gluten-free, contains dairy and cashew nuts): Indulge in this timeless Sri Lankan sweet treat made from condensed milk and cashews. It boasts a delightful crumbly texture with a hint of salt and spice, thanks to the infusion of cardamom.
