VicX is switching things up this August, turning North Sydney into a temporary playground for some of the city’s most recognisable food names. For just three weeks, the precinct will roll out a tightly curated series of collaborations that pair big-name eateries with VicX retailers. The limited run, called The X Series, kicks off on 7 August and will pop up each Thursday to Sunday until the 23rd August.

Each week, visitors can expect new menus that won’t be found anywhere else, from viral sweets to hybrid bites that draw on the city’s diverse food culture. The idea is simple: one-off pairings that make the most of Sydney’s talent for unexpected flavour mashups.

VicX August specials

The series launches with a four-item menu dreamed up by cult burger bar Mary’s and Indian-inspired food truck Pocket Rocketz. On offer is a Cheeseburger Spaceship Jaffle, cooked in a custom cast-iron jaffle press, alongside a fried butter chicken burger soaked in a 64-hour sauce. Add on hash browns seasoned with chaat masala and tandoori mayo, and wrap it up with chai masala soft serve topped with saunf mithai. This menu is only available 7 to 10 August and will disappear once sold out.

From 14 to 17 August, the attention turns sweet with a collaboration between matcha dessert bar Dopa and small-batch bakery Cherry’s Goods (known for their hit venue Upsouth in Bondi). Their matcha-focused menu features a white chocolate pistachio cookie and a white chocolate matcha cookie, served with your pick of a hot or iced matcha latte. The pistachio cookie is the latest flavour from Cherry’s Goods and will only be available at Dopa VicX.

Later in the month, the minds behind Tokyo Taco and ToroToro Ramen will join forces for a fusion that layers Japanese precision with Mexican fire. While full details are under wraps, expect chilli, citrus, umami and seafood to collide in two boundary-pushing dishes designed for adventurous palettes.

Menus change weekly and once sold out, they’re gone. Find out more here.
