This summer, Zephyr at the Hyatt Regency Sydney is offering guests a ‘Taste of the Mediterranean’ high above the busy streets of Sydney’s CBD. The décor is inspired by stylish Mediterranean locales, featuring elements like citrus fruits, seashells, bougainvillea, and landscapes reminiscent of the French Riviera. Guests can enjoy a warm, carefree European summer ambience. It’s the perfect venue to enjoy a cocktail curated by Zephyr’s Mixologist, Jordan Rizk.
“Zephyr’s latest cocktail creations are a sensory journey that brings drink trends and the flavours seen in the Northern Hemisphere summer to Sydney as we enter the warmer months and the timeless attraction of the Mediterranean’s most sought-after summer locations, such as St. Tropez, the Amalfi Coast and the Greek Islands straight to your glass,” says Jordan.
“A hero cocktail on our new Zephyr Signature Cocktail menu is the Zephyr St Tropez Spritz – a taste of the glamourous French Riviera. Crafted with the richness of charred pineapple rum and the depth of barrel-aged gin, this spritz offers a luxurious twist on a classic. Sparkling rosé wine, fresh basil, and a splash of soda complete the experience, creating a refreshing and sophisticated cocktail that carries you to the sun-kissed shores of St. Tropez.”
To complement its new vibrant cocktail list, Zephyr’s summer food menu highlights Spanish, Italian, and Greek flavours. Zephyr DJ will also be spinning tracks on Friday and Saturday evenings to set the summer mood and keep the good times rolling.
Sailmaker summer edition of the Seafarer Dinner
The Hyatt Regency Sydney’s Sailmaker has introduced its summer edition of the Seafarer Dinner. This seasonal three-course menu features ingredients sourced exclusively from sustainable fisheries.
The venue has re-imagined Sydney’s most indulgent and sustainable seafood experience. The culinary team, led by Executive Chef Sven Ullrich, is dedicated to working with sustainable suppliers as a core mission.
The Seafarer Dinner features ingredients sourced exclusively from fisheries that follow sustainable practices, including eco-friendly farming and wild-caught products.
“I am passionate about working with local suppliers and farmers to hand-pick the best and freshest ingredients for each dish whilst being guided by what’s in season. It’s important for us to share our sustainability story and the origins of our dishes with our guests,” says Executive Chef, Sven Ullrich.
Sailmaker’s summer menu includes sustainably raised kingfish from Clean Seas – Spencer Gulf, South Australia, whilst the barramundi is from the renowned Humpty Doo farm, Northern Territory and the Murray cod is from Aquna, a premium and sustainable pond-grown Murray cod farm in the Riverina, New South Wales. The bread on Sailmaker’s menu is sourced locally from PiOik Bakery where all products are handmade using organic, market-fresh seasonal ingredients and no preservatives. With the restaurant’s butter being batch churned from single-origin cream, creating a less processed product, sourced locally from Pepe Saya Buttery.
On arrival, guests are invited to enjoy the Mediterranean tapas table filled with bread, grilled artichoke, stuffed peppadew, smoked mozzarella, cured olives, dips and more, designed to be shared family style.
As part of the Seafarer Dinner experience, guests can then choose from a selection of six entrées and six mains – with other standout dishes including Fremantle octopus, Skull Island prawns, Hawkesbury River oysters and more, accompanied by the finest Australian ingredients and paired with a carefully crafted wine list with New South Wales wine heroes at the forefront.
To finish the evening, a sweets trolley will see mouth-watering desserts prepared and served tableside – from classics like chocolate brownie or Basque cheesecake, to enchanting flavours like pear-rhubarb cobbler.
The Seafarer Dinner menu is available every Thursday, Friday, Saturday and Sunday evening from 6pm to 9:30pm, with guests able to indulge in the Choice Menu for $89 per person.
